Fluffy Pancakes
If there is one thing my boys love to have for breakfast, it's pancakes.
There are a couple of recipes that I have, some are healthier or less unhealthy than others. Some take more time and more appliances and some pancakes I can whip up in 10 minutes. It depends on my mood and what I have at hand that day.
Todays recipe is fluffy sour cream pancakes. A mix out of how my grand dad used to make them, and a recipe that I found online.
What do you need:
• 4 eggs• 40g caster sugar
• 10g vanilla sugar
• 150g sour cream
• 100g flour
• Dash of salt
• Cooking spray/butter/what you prefer
How to make the batter:
Separate the eggs into egg whites and yolks. Put them in separate bowls. Whip up the egg whites while gradually adding both sugars (vanilla and plain) until you reach soft peaks. Set aside.Mix the egg yolks with the sour cream. Add the flower and salt. Lastly fold in the egg whites starting with one third of the whipped egg whites and then add the remaining egg whites.
You can now add some diced apples, raisins or bananas. These are delicious plain as well.
How to bake them:
I don't bake these in a pan, but on an electrical crepe maker. To make small pancakes you can use a small soup soon. Bake for around 3 minutes each side on medium heat until golden brown.Enjoy!

ReplyDeleteHehe, I do it for ages now, since my mom showed 12 years old myself how to make different kinds of pancakes. If you have cake pop maker - you should try japanese recipe of Takoyaki. It's reminds me of not sweet cake pops ;)
